Boring title 😳 Good news, though – my papers have moved into the editing stages 
The late brunch held me over really well – that oatmeal really is a superfood. I did eventually need a snack while I was burning all that energy looking at blogs and not writing my paper. I decided on a PB + Chocolate Dream Muffin.
I heated this guy up in the microwave for about 15 seconds. The muffin got even doughier, if that’s possible – heavenly!
For dinner, I finally decided to open a box of NASOYA Extra Firm Tofu that I had bought a long time ago but hadn’t gotten around to using. I cooked a serving in a pan with about a tbsp. of KC Masterpiece Honey Teriyaki marinade. I served it over a bowl of spinach and added some tamari dressing.
I had 1/2 cup of cottage cheese on the side. The presentation looked like this:
I love how my blog teaches me to make meals look pretty 🙂 I used to just dive in and devour the food immediately, but now I can appreciate the food so much more!

YUM! I love Edy’s Slow Churned ice creams – 1/2 the fat but all the goodness 🙂 They were buy one get one free at the grocery store so of course, I had to get them. Had to. I had a nice 1/2 cup serving with a Weetabix biscuit for garnish.

I’m off to finish editing, though I may be rudely interrupted by Desperate Housewives and Brothers & Sisters. Sunday night television can be so demanding – I really should learn to say “no” – but not tonight 🙂
I may have to indulge in a Coffee Cocoa while watching…

Jill – it is just strawberry. I’ve had Neopolitan before too and really loved it. I haven’t tried Soy Delicious yet but I love those “Mini” ice cream sandwiches so I’m thinking that might be my next dessert purchase! Is raspberry your favorite?
So far, yes. I haven’t had that many of them, but I love raspberry and espresso, yuuuuuuuum. Of course, it really depends on my mood at the time.
