Delicious disaster.

Merry Monday! Sorry this post is so late – I had to go into NNN earlier than usual because of some problems we were having with some video. Thankfully the crisis has been averted :mrgreen:

I started out my morning with 4-mile run with my roomie. Very refreshing and the perfect way to start a week of class. I ate 1/2 of a Clif Chocolate Brownie ZBar before the run.

For breakfast, I created what I’ve dubbed a culinary disaster in the kitchen – but it still tasted good. I attempted to make Kath’s version of The Peanut Butter Boy’s banana “cheese danish” pancakes. I split Kath’s measurements in half – the batter really is delicious 🙂 But when I put them on the skillet, they wouldn’t stay solid – no matter how long I cooked them. I couldn’t flip them because they kept falling apart – so I ended up just folding them into a semi-taco, but it really looks more like mush.

The “batter” still tasted amazingly good – I just wish I knew what I need to do next time to make them into pancakes 😳 Maybe I need to add more egg whites? I’m open to any ideas!

    Sorry that the pancakes didn’t turn out quite right – but hey, it almost looks like a bread-pudding dish or something, haha. As long as it tastes good, that’s what counts! :0)

  2. I LOVE the batter too. Are you sure you didn’t miss an ingredient? What temp did you have your skillet on? It should be on medium to medium high. I suspect you had the heat too low? I hope you’ll try them again!

    I think you’re right about both! I probably should use more egg whites because in halving the recipe I only used 1/8 cup and that’s probably not enough to hold it all together. I will try them again soon!! Thanks for the tip 🙂
