Roommate brunch.

I love lazy Sunday mornings. They provide me with the sanity I need to get through the week ahead. This Sunday morning was extra special because my roommate and I made brunch. My contribution was oatmeal pancakes; hers was ombled eggs with tomatoes and spinach – a cross between an omellette and scrambled eggs 🙂

The oatmeal pancake recipe came, of course, from Kath’s blog. I added 1/2 of a large banana to the batter before cooking – it is SO delicious when it gets cooked inside the pancake. It almost reminds of banana bread. Almost.

The ombled eggs were made with roughly the equivalent of one original egg beater and one egg white. My roommate then added a tomato and 1/2 cup of spinach. The recipe was then split in half to get what you see above. I sprinkled my half with pepper, garlic salt and Mrs. Dash Southwest Chipotle seasoning – I love that stuff!

I drank water with breakfast. I’m not a big fan of drinking anything other than water with my meals – for some reason I find it takes away from the taste of the food. So after breakfast, I decided I wanted something warm, since it’s still pretty chilly here in Chicago 🙁 . It didn’t take long for me to decide to make Coffee Cocoa.

Coffee Cocoa is something I came up with through trial and error. Here’s what I use:

  • 1 cup coffee (I have a Senseo coffee maker, so I use one of the Paris coffee pods)
  • 1 tbsp. Fat-Free Vanilla CoffeeMate
  • 1/2 tbsp. Nestle Rich Chocolate Hot Chocolate Mix
  • 1 tbsp. Fat-Free Cool Whip (my addiction to this stuff is almost silly – again, almost.)
  • An extra sprinkle of hot chocolate mix on top.

The drink comes out to roughly 60 calories. If anyone has any tips on creamers like CoffeeMate that do NOT have the partially hydrogenated oil, please share! I would switch in a heartbeat.

This entire delicious and nutritious brunch totaled 300 calories with 20 grams of delicious protein! Now that my stomach has had some time to settle, I’m off to the gym! “See” you later!

  1. I saw your ‘shameless self-promotion’ on Kath’s page and it made me laugh, so I thought I’d check you out!

    Those eggs look AMAZING! I was craving something just like that yesterday, only lacked the eggs to had to settle for cottage cheese. 🙁
