‘Pump’ It Up Muffins
At first I was going to make mini muffins to have as a snack option. In the end, however, I decided to go all the way and make six big muffins that I can have for breakfast options instead! I’ve dubbed them “Pump” It Up Muffins – thanks to the extra “power” provided by oats and flax. I hope that’s a somewhat original name!
Here’s what I used:
- 1 cup old fashioned oats
- 1 cup whole wheat flour
- 1 tbsp. baking powder
- 1/2 tsp. salt
- 1/2 cup applesauce
- 1 15 oz. can pumpkin
- 1 tbsp. ground flax seed
- 1 tbsp. brown sugar
- 1 tbsp. chocolate chips (divided evenly)
- Cinnamon to taste
Combine ingredients in a bowl (leave out the chocolate chips at first). Grease a muffin pan with cooking spray and evenly distribute the muffin mix into each cup. Stick chocolate chips on top. Bake at 375* for 25 to 30 minutes.

So they look super scrumptious and all, but my favorite part about pumpkin pie is the crust. I thought to myself, what could I use to mimic the crust and still be somewhat light and healthy?
Two words: TEDDY GRAHAMS!!!!!!
A perfect imitation of a graham cracker crust. Plus, they’re adorable!
Each muffin has 180 calories and 7 grams of fiber!
those ARE adorable! <3 looks delish too- and i love the healthyness- especially how theres only 1 tbsp of brown sugar π
good job!
Oh wow! These will definitely be on my to do list next week… soo cute!!!
I love your recipes

Oh my goodness, I didn’t know muffins could be cute — but these are the cutest muffins I have ever seen! And they’re super-healthy. Go you!
Rika ~ Thank you! I’m all for skimping on the brown sugar when there are other sweet ingredients!
Beck ~ Thanks, let me know how they turn out if you do make them!
ruby red vegan ~ Thank you! The teddy grahams were a last minute find, but I’m so glad I remembered them because they really make the muffin π
Awww, sooo cute with the teddy grahams!
HAHAHAHHA, I love the teddy grahams!
I seriously couldn’t stop laughing! Look carefully, there are bears that have their hands up and some bears that have their hands down!
CCV ~ Haha, thanks π
Sharon ~ I didn’t notice that before! Haha, I love it!!

coco ~ Thanks π
they do look great! I definitely want to try them out! One question, how many oz of pumpkin are in the can that you call for? Thanks!
These are soooo cute and delicious looking! I will definitely have to try them…what a great breakfast option!
Laura ~ Good question! It was the smaller, 15 oz. can of Libby’s. I will change the recipe to reflect that – thanks π
Andrea ~ Thanks! Let me know if you do try them π
Love the teddy grahams!

runjess ~ Thanks!

thank you thank you for this base! I just made a batch, with some random substitutions based on a lack of ingredients! This sounds like a lot of subs, but your recipe was actually an amazing base
here’s what I did — (no pumpkin, added a banana and a chopped apple, replaced applesauce with yogurt, had no flour so I used 1c. oats and 1/2 c. fiber one (didn’t need the extra 1/2 cup oats to make up for the 1 c. flour, threw in some raisins, a splash of maple syrup, a splash of milk, and of course lots of cinn), and I have 9 pretty huge looking muffins ready to bake tommorow morning sitting in my fridge!
makenna ~ Haha, I’m glad I could provide a good base for you π Your substitutions definitely sound amazing. I hope that you enjoyed your muffins!
[…] who officially launched his recipe e-book today! I’m slightly biased because I submitted my ‘Pump’ It Up Muffins, but you really should check it out because there are a lot of really great recipes from some of my […]
I keep forgetting to comment here.
I made these muffins a few weeks ago before a trip, for a healthy, filling snack for the plane.
The only change I made was using spelt flour instead of whole wheat and I added a tbsp of butterscotch chips on top of the chocolate and mixed half of both chips into the batter.
They turned out really, really great. I loved how dense and moist they were and although mine turned out a little flat (probably b/c of the spelt) they were still awesome. Thanks for the recipe, I’ll be making these again for sure.
Jessica ~ Awesome! I love the changes you made – butterscotch chips especially sound amazing. Thanks for checking back and letting me know – I really appreciate it π
[…] baked Eating Benderβs βpump it up muffinsβ. I used an egg instead of flax, pear puree instead of apple sauce and omitted the chocolate chips […]
I made these and LOVED them- I omitted the grahams (can’t get them here π ) and chocolate chips, but they turned out great! I also used an apple pear puree (all I could get). Oh, and subbed the flax- one batch, I used 1 egg, and the second batch used 2 egg whites. Couldn’t tell the difference but will use a whole egg from now on… I feel bad throwing away yolks!
I would love to make these but I do not have any flax in the house. Can I use anything else? Maybe just skip it all together?
Hi Alyssa ~ I definitely think you could omit the flax — maybe use an egg instead to keep everything together. Let me know if you try them!
I’ll definitely be making these soon, though I may try subbing greek yogurt for the applesauce. Think that’ll work? I love the teddy grams — super cute. Too bad I’ll be biting their heads off…
I think Greek yogurt could definitely work! It might be a little more tangy and a little less sweet, but worth a try for sure. π The teddy grams are my favorite part, though it is too bad they are too delicious not to bite their heads off…
