Happy Halloween!

What better way to start this holiday than with a bowl of pumpkin oatmeal? Oh, and Frankie Stein wanted to stop by and say hello again, since he received such a positive response the last time. These oats were fantastic! Here’s the break down:

  • 1/2 cup old fashioned oatmeal
  • 1/2 cup water
  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 sliced banana
  • 1 tbsp. ground flax
  • 1/2 cup pumpkin
  • 1 tsp. maple syrup
  • 1 tsp. pumpkin butter

Adding the banana really brought out the sweetness. These oats were so voluminous!! I love the way a little pumpkin can really “pump” them up πŸ˜‰ And the best part was the topping:

I picked it up at Whole Foods for the holiday week πŸ™‚ It tastes great!

My Halloween Night was pretty much perfect. K and I had an amazing time! We started out by carving our pumpkins, who we’ve named Morton and Myrtle.

I picked Morton for my guy. No real reason other than I love names like Morton, Frank, or Harry for things like pets, plants or inanimate objects πŸ™‚ Always have!

And K named hers Myrtle because she looks like she’s moaning. Any Harry Potter fans out there? You’re in good company because I am OBSESSED.

Together, they are Morton + Myrtle. Pumpkins in love. And of course, they had some little seedlings together, which I carefully washed.

And then I oh-so-maliciously baked them – I’m a seedling killer!! Ok, I think it’s time to come back to reality because I’m starting to scare myself πŸ˜‰ I made some yummy pumpkin seeds! Half of the batch was savory with garlic salt, onion powder, chipotle spice and pepper.

The other half was sweet with brown sugar and cinnamon.

Both were pretty delicious πŸ™‚ Except I got a bit impatient and turned the oven to broil after a while, so some of them burned 😳 I tell ya, I’m still such a novice!

After carving and baking, K and I got into our costumes (I’m on the right)…

We were spa girls! I know, creative right?! We got a lot of positive feedback, but some people were confused. One guy was like “Oh…er…you ladies look like you just got out of the shower!” True, but not quite! The best part of the night was our fab loot!

I used a “spa bag” to hold all the candy πŸ˜‰ I got a lot of my favorites, including Peanut M&Ms, Mike & Ike’s, Twix, Reese’s, 3 Musketeers…all the goodies from my childhood! And I definitely ate Good ‘n’ Plenty – no, not that yucky licorice candy. I mean that I ate GOOD and PLENTY chocolate and candy. I’ve been brushing my teeth all night long!! Totally worth it.

    your jack-o-lanterns look fabulous- i’m a huge harry potter fan, too but sadly haven’t read the last book yet… i hang my head in shame hahah
    those pumpkin seedlings sacrificed their lives for a good cause- pumpkin seeds are so good! i think that’s the best part about carving pumpkins πŸ˜€
