Banana Oat Bars
I looked up recipes for banana bread, scones and muffins. I knew I wanted bananas as the key ingredient – what I ended up with was an oaty, doughy, chewy and naturally sweet treat
I added raisins and chocolate chips to a portion of the dough – the rest I left plain.
Here is my recipe:
- 1 cup whole wheat flour
- 1/2 cup dry oats
- 2 tbsp. Promise light
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- Cinnamon to taste
- 2 ripe mashed banana
- 1 tbsp. light brown sugar
- 1/4 cup unsweetened vanilla almond milk
Preheat the oven to 400*. Mix first seven ingredients together in a large bowl. Mix banana and brown sugar together in a separate bowl. Alternate adding banana mixture and almond milk to dry ingredients. Mix until moist.
I then spread the dough out on a flat baking pan (covered with Silpat) and added the raisins and chocolate chips to one corner of the dough “rectangle.” I baked it for 10 minutes or until the bottom was just slightly brown.
I cut the dough into eight squares that are roughly 100 calories each.
Do you think I could make these with regular milk?? i have bananas going bad but I don’t really want to run out and buy vanilla almond milk…
