Is Fat Tuesday over already? I can’t believe it’s 9:40 pm as I start writing this post. We’ll see how long it takes me – I’ll make a time stamp when I’m finished 🙂
The good thing about Tuesdays is that since I don’t have to wake up early to work, I can wake up early for another reason – to workout. Big difference! After snagging 1/2 of a Cinnamon Raisin Gnu Bar, I headed to the gym for a 40-minute elliptical workout, then came back and did my P90X Core Synergistics (well, my abbreviated version).
I love big workouts in the morning because they get me extra hungry for a big breakfast! Today’s was no exception and, as the title of the post indicates, involved a so-delicious-it-should-be-unhealthy-but-it-isn’t oatmeal topping.
No, that is not icing. But can you see the resemblance? Many of you have been asking whether PB2 is worth the investment (I haven’t seen it in stores near me, but you can check online by visiting their website) and I truly think it is. There are so many different ways to use it that the company even has a recipe page! Today I used it as a topping for my whipped banana oatmeal. I combined 1/4 cup Voskos Greek yogurt (the fat-free kind, which is a bit runnier) with 2 tbsp. regular PB2 and about 2 tbsp. water (add more or less depending on desired consistency) and stirred it all together.
Once the oats were done, I simply poured the “icing” on top of the oats. The creamy, peanut buttery goodness permeated every bite. No need for PB on a spoon when you can do it this way! Plus, the yogurt adds a little extra protein.

I spent the rest of my morning and early afternoon getting my edumacation. Handing in papers feels nice and all, but then I know there’s another one looming around the corner. Aside from that, I enjoyed mis clases and snacked on a Pure Protein bar to hold me through the lunching hour.
When I finally arrived back at home, I found that I really wasn’t too hungry. I decided to go with the flow and made myself a little platter of white cheddar cheese and a serving of Kashi crackers.
Then I snagged about 1 tbsp. of Barney Butter straight from the jar. Ya gotta do what ya gotta do.
The rest of the day is a bit of a blur. I am so tired right now! Between applying for jobs, going to another class and doing some informational phone interviews, my brain is on shut down mode. I had another mug of Coffee Cocoa later in the day to pick me up again (although who am I kidding, caffeine has no effect on me no matter how hard I try)!
When it came time to make dinner before class, I went with something quick and easy: a whole wheat scrambled egg wrap. I cooked up 1 whole egg + 2 egg whites with some spinach in a pan on the stove. Once that was all nice and hot, I added some reduced-fat Mexican cheese and stuck the whole thing in a La Tortilla Factory wrap. Here it is prior to rolling:

This wrap was awesome and really kept me full through my three-hour class! When I got home, I made myself a POM Wonderful spritzer.

This stuff is very tart on its own, but tastes great when combined with other juices or club soda! I also want to try the pom-tinis that are making their way around the blogosphere 😉 I love the antioxidants and the fact that it’s 100% juice. It seems as though there are a lot of potential ways to use these samples, so I’m planning to incorporate the juice into recipes soon. Thanks, Daniel!

I am slobbering all over myself with that PB “icing.” How can I get some without Chris knowing the insane amount of $ I am willing to shell out on dehydrated peanuts? 😉 Can you just imagine me counting out my pennies to buy a money order so that it is all done on the down low! Not really. I have an allowance. Not really again.
I am the same way with the caffeine. I think I could drink a whole pot of coffee and then go take a nap.
I wish I was that way with coffee 🙁 I didn’t think it affected me but then we recently switched to half-caf and I am seriously having withdrawl symptoms! Yikes!

Coffee cocoa looks delicious! I might just have to incorporate it into my breakfasts once in a while. Sometimes I think caffeine has no effect on me either!
That is my FAVOURITE way to dress up oatmeal, except I always mix the actual nut butter with yogurt since I don’t have pb2. Same outcome, but pb2 would make it a heck of a lot easier!
It seems like there is always ‘something else’ to get done once you accomplish one thing for school isn’t there? It’s a vicious and never ending circle of school work DOOM.
OKAY GOOD, so I’m not the only one that seems to be completely immune to the effects of caffeine. I love me some good hot coffee but where are its super energizing powers? They just don’t work on me. 🙁 That being said, however, I’m going to go get a mug of the good stuff right now 😉

i love that pow juice! so delicious. extra delicious with some absolute citron, contrieu (sp?), lemon juice and a splash of sparkling lemon lime water… mmm 😀
