First day of the Breakfast Challenge = complete! I have to admit, I got a little caught up in all my papers so I forgot to photograph one of my meals (oops!) – but for the record, it was very breakfast-y: toast with PB, some berries, a banana and some dried pineapple – YUM! I’m sort of on carb overload…can you tell? π
I didn’t forget to take a picture of dinner though π I started out with a bowl of cereal: one serving of TJ’s High Fiber and Nature’s Path Puffs, with a Weetabix biscuit crumbled over the top. Served again with unsweetened CHOCOLATE almond milk, which, by the way, you must try! It goes really well with cereal, especially if you heat it all up in the microwave for about 30 seconds! Delicious!!

After the cereal I was pretty much done with any sort of carb for the day, so I had two “poached” (aka microwaved) egg whites mixed with some reduced fat Mexican cheese and topped with Tostitos salsa!
I also had a cup of Coffee Cocoa earlier in the day, again while I was busy writing my paper. Many of you know what that looks like by now π
So what’s the verdict on day one? Well, I certainly wasn’t as creative as Carmen in terms of finding “alternative” breakfasts (beans on toast, who knew?!), so I’m going to have to work on that, because otherwise all the sugar/carbs are going to wear on me before the five days are over. What better way to do research than by asking you!
Do you have any interesting breakfast ideas that involve non-traditional breakfast foods?
I want to make this challenge as interesting as possible, so any and all ideas are welcome – within a college student’s grocery budget, of course!! π

Unsweetened chocolate almond milk?! Ive been searching far and wide. =( The sweetened stuff is good, but TOO sweet!
Does pasta count as breakfast food? Because I lived on it as a breakfast food growing up!!
Mmm, Weetabix and TJ’s high fiber O’s = two of my favorites!! :0) Using chocolate almond-milk in your cereal is quite intriguing!! Too bad they don’t make carob almond-milk…
Hmm, non-traditional breakfast foods… how about some sort of pasta dish or something?? You know who has EXCELLENT non-traditional breakfasts?? Em from the “Gliding Calm” blog (http://glidingcalm.wordpress.com ) – I bet she could give you some great ideas!

Romina ~ I can’t see how people do it – there is no way I could give up carbs! And if you say pasta is breakfast food, then I say it’s a breakfast food!
VeggieGirl ~ That is too bad about the carob almond milk π You and Romina = great minds think alike!! And great suggestion to check out Em’s blog – salad for breakfast is in my future!!
I could never give up carbs either, I LOVE THEM. I think pasta is breakfast food – left-over spaghetti is surprisingly good in the morning! MY mom loves pie for breakfast, too.
FRUIT SOUPS! Cold of course… strawberries, honey, vanilla protein powder/vanilla extract and plain yogurt! Or with peaches (You can use flavored yogurt if you wish! I only like plain… fage, especially). It’s sO amaaazing!
Hmm… Let’s see here. Okay, you’ll have to trust me on this one… Cinnamon-Raisin Bread toasted with veganaise/lemonaise (SO much yummier than mayonaise) and turkey slices… TOASTED… A.MAZING Sandwich. It’s the most satisfying EVER! A wonderful cranberry-walnut bread works so well too! My advice: Go to a bakery near you and buy a REALLY great quality bread with both a dried fruit(s) and a nut/nuts… Jenn you have to try this! It’s the most amazing Sammie E.V.E.R. (Works just as well with Tofurky too, by the way π — If Liz/Romina are reading this!)

I agree with Romina and VeggieGirl – pasta for breakfast is YUM. I also have sandwiches or veggie burgers for breakfast quite a bit. A guy I work with sometimes brings in leftover chinese for breakfast but that kind of grosses me out. π
Love your website and adore breakfast foods! I find that I need protein in the morning to fill me up, so here are my faves:
1. Smoked salmon – put it on a high-protein bagel or wrap, scramble with egg whites, or enjoy as is
2. Turkey bacon – great as a side, in a BLT, or in an omelet
3. Veggie burgers/veggie sausage – awesome side dish, sandwich on toast, or topped with a slice of cheese
4. Low-fat cheese – melt it with tomato on an english muffin or make a quesadilla
5. Cottage cheese pancakes – ’nuff said
6. Turkey or ham slices – make fast sandwiches, yummy omelets, or wrap a slice around some veggies and cheese for a fast meal
7. PB-stuffed French Toast – make a PB sandwich, dip it in egg whites, and cook in a skillet until its toasty
There you go, Jenn! Hope you try some of these – they make breakfast a lot more satisfying and delicious!
