Visions of Paris

This morning’s breakfast brought back visions of my Paris 2007 Spring Break.

When Heather posted the recipe for her version of protein crepes, I knew that I needed to make them as soon as possible. I love crepes! When I went to Paris my sophomore year, I ate one almost every day (along with the most amazing baguettes and breads), and was very intrigued by a recipe that focused on eggs + protein…a new twist! Here’s what I came up with:

I halved the recipe proportions and used 3 egg whites and 1/2 scoop of Jay Robb whey protein powder. I chose the chocolate flavor 🙂 I whisked the ingredients together until they were just slightly lumpy (I think it’s impossible to make it smooth because it’s egg whites and powder), then cooked up 2 medium-sized crepes in a frying pan on medium heat, flipping each crepe over once. I only needed about 2 minutes per side per crepe, just as Heather said.

When all was said and done, I topped each crepe with a layer of PB2 icing (click link for the recipe) and a handful of fresh blueberries. These were ah-mazing! I loved the eggy texture and the fact that I was getting great taste AND a protein punch. I can’t wait to make them again. Thanks, Heather!

This breakfast kept me full for a really long time! I was able to get through a morning of studying for my Economics of Gender final on Tuesday (yes, you read that right…a FINAL – the joys of being on the quarter system). Eventually, I decided to take my reading with me to the gym to be more productive. I grabbed my all-time favorite bar for fuel.

Hi ZBaR! I missed you! I told myself I wouldn’t buy them again until I had dwindled my bar supply. Fortunately, the other bars are almost gone, so I bought myself a new box 🙂 These taste just as good, if not better than, a brownie to me.

At the gym, I did my step + bike workouts for 45 minutes, plus a condensed arm workout. I’ve been running low on time this week, and have been slacking a bit on my P90X workouts. I will be sure to factor that in to my final analysis. When I got back, I was definitely hungry for lunch. I decided on a “SET” wrapspinach, egg and turkey on a La Tortilla Factory wheat wrap.

I also snacked on a delicious Braeburn apple + cinnamon with light string cheese.

I spent the rest of the afternoon continuing to study and becoming more addicted to Twitter. I also did some much needed chores such as laundry and cleaning my room. It’s amazing how fast time goes on the weekends. Sooner rather than later, it was time for dinner. I couldn’t wait to use my new sauce:

After seeing it all over the blogosphere and hearing rave reviews, I finally decided to pick up a jar of Bone Suckin’ Sauce at Whole Foods this weekend. And what better way to use it than on tofu?!

I blotted and sliced a block of extra firm tofu and added 4 tbsp. of the sauce total, spreading it evenly on each side. I then topped one side of the tofu with black pepper + chipotle spiced rub. Bake at 400* for 50 minutes, flipping once at about 40 minutes.

It was so delicious! Definitely “bone suckin'” good 😉 I had 1/2 of the block and am saving the other 1/2 for lunch tomorrow. Can’t wait!

Alongside the tofu, I cut up a gigantic red pepper and served it with 2.5 tbsp Sabra hummus.

I love when I can finish a dinner and feel fully satisfied. An update on the intuitive eating: it’s been going pretty well so far. I find that I’m still eating at roughly the same times of day just because my body is used to it, but I’m also making sure to ask myself whether or not I am truly hungry. I think the true test will come during the week, so stay tuned!

To end the night on a sweet note, I had a cup of rice pudding with 1 tbsp. Barney Butter. Yum!

I’m currently watching the 2-hour Brothers & Sisters special. It is INTENSE. What an emotional roller coaster – and I still don’t even know what’s going to happen. Love this show.

  5. Hey girl that tofu looks so good 🙂 Everytime I try to make it I think I put too much weight on it to drain the water..how do you drain yours? Whats the deal with that PX90 stuff? Is it good? It seems like a lot of money..where do the workouts take place? I’ve heard so much about it and I wasn’t sure what it was like

    • Julie ~ As far as tofu goes, I pull the whole block out of the box and give it one initial press with a paper towel. Then I dump the water out of the box, put the block back in, and cut it into equal slices (8-10 depending on how thick you want it). Then I stand the slices upright in the box and give each of them a squeeze with a paper towel. I then let them sit in the box for another hour or so, letting more water drain to the bottom of the box. Then I come back and give each slice a final squeeze before putting them on the pan. It seems to work ok, so let me know if it works for you!

      For P90X – it’s basically a set of 9 workout DVDs and an eating plan that a lot of people have seen success with. I got it as a Christmas present and chose to focus more on the workouts rather than the eating plan, since I’m already happy with what I eat! I do it from home (all you need for most of the workouts is a set of dumbbells, a mat and sometimes a chair), and I’ve really been enjoying it so far. I’ll do a more formal review once I’m finished with the 90 days – I want to give it the time and explanation it deserves. But I hope that answers some of your initial questions!

  12. I love crepes. If I could eat them everyday I SOoOO would! wait….I just realized that I have all the stuff to make them… 😆 I’m going to be making crepes pretty soon also. There’s this crepe shop that I always go to. They make the perfect crispy crepe to go with the warm nutella and banana slices.

    The tofu looks deeeelicious, and rice pudding is one of my faves – yummy eats!

    Now I’m craving some crepes…this weekend perhaps.

    My mom eats 2+ Choc. Brownie ZBars EVERYDAY! She can’t get enough of them and we always have to buy the big case of them haha

    So glad you liked the crepes. They’re not so light and airy as those lovely Nutella filled French crepes, but pretty good considering all the protein they contain. So glad you liked them and thanks for the shout out!

    I’m trying to get into Twitter, but I’m having a hard time. My brother emailed me last week saying he was disappointed that I wasn’t using it, and so I gave him my login and password and said go for it. I laughed all week as my email inbox was bursting everyday with all these new people sending me “thanks for following” messages and comments about my blog. Scott (my brother) was returning all the messages trying to talk about almond butter and doing my status updates. So sweet, but I told him I would take over this weekend. I keep forgetting to update.

    Bone suckin sauce – I’ve got to try that. I always look at it, but then end up buying Annie’s or TJ’s BBQ. Maybe I’ll switch it up this week.

    I was wondering about your P90X workouts – I’m looking forward to your conclusions and summary of the workouts. Have a good protein filled week Jenn…try not to gawk over Mr. Robb’s bulging biceps every morning. Hehe. 🙂

    Zbar’s are my favorite too. My cabinet is stocked!

    have you tried heating up the z-bars? It’s beyond awesome. 20 seconds in the micro and you have what tastes like a freshly baked cookie or brownie. A-MAZING.

  29. I LOVE the idea of using that awesome Bone Suckin’ Sauce on tofu – very cool! That’s the best BBQ sauce I’ve had outside of a little mom-and-pop place in West Memphis, Arkansas.

First of all, it would be such a waste if you didn’t launch your own health food line/product/recipe hub…i don’t know HOW, but you have such great, creative non-boring breakfasts I wish I were more like you!! Nutella crepes are awesome for sure! I also baked a bbq tofu last night, but I overbaked them and some of ’em look like tofu chips. hahahaha

    Second…teeheehee, that goofy picture totally cracked me up. Study abroad is always SO awesome!!!

    I also want to make some of these super protein crepes, they look maaaarvelous. Most especially with that delicious “icing” of course!

    That WRAP. ..Turkey AND egg? Holy delicious protein overload! I need to try that combo! AND the Bone Suckin Tofu looks baked to complete perfection. You are too pro at making the BEST looking foods.

    The intuitive eating thing is HARD. I always try to eat when I’m hungry but sometimes I just WANT to eat my meals at certain times. Or it’s just more convenient. If only hunger could be more easily turned on and off! Glad to hear it’s going pretty well for you though. I’m going to try harder to be more intuitive about it right along with you. Our bodies know what they want when they want it, right?
