I’m glad to know that I’m not the only person who has yet to try a medjool date. Or should I say, who HADN’T tried a medjool date? 😉 We shall see!
After breakfast, I started cleaning the apartment. Listening to music definitely helped make the time go by faster, and the place was spick-and-span before lunchtime! I decided that I wanted to go to the gym before lunch, so I grabbed a handful of VeggieGirl’s dried apple slices for a quick pick-me-up.
These are incredibly moist and absolutely delicious!
After a good workout on the stairmaster, rowing machine and treadmill – I did a circuit of all three, plus some abs – I came back, cleaned up and was definitely ready for my next meal. I pulled out the last of my Quorn Chik’n cutlets to make myself a yummy Barbecue Chik’n Sandwich.
This sandwich was great! I heated up the cutlet in the microwave for 2 minutes while simultaneously broiling reduced-fat Mexican cheese on top of an Arnold’s Sandwich Thin. When the cutlet was ready, I spread 1 tbsp. Annie’s Smokey Maple BBQ Sauce on top and wrapped the cutlet with the thin. So easy and so filling, too! On the side I had 1/2 small banana with 1 tbsp. peanut butter.
It made for a quick and satisfying lunch.
After lunch, I was supposed to meet one of my friends for coffee or tea. Well, temptation got the best of me, and I ended up calling her to suggest that we go see Twilight – AGAIN. She’s the same friend who saw it with me the first two times! So yes, I have now seen it three times, and I swear it keeps getting better. I haven’t been this crazy about something since Harry Potter!
Once the movie ended, it was time for dinner. I was really looking forward to it because Bobby and I decided that it was omelette night! We haven’t done that since this summer – it’s been way too long!!
I made mine with 1 whole egg and 2 egg whites. I added in fresh chopped red, green and yellow pepper and mushrooms before sprinkling the top with reduced-fat Mexican cheese. It melted nicely and made it much easier to taste the cheese in every bite!
After finishing up the omelette, I made a small spinach salad with the leftover peppers and mushrooms, topping it with Annie’s Goddess Dressing. Yum!
Omelette night was awesome. We will definitely be bringing it back again sometime! We spent the rest of the night vegged out (pun intended) on the couch, watching Jeopardy and Mulan, of all things. That is my FAVORITE Disney movie of all time – great music, great story, and a real “chicks rule, boys drool” kind of thing 😉 It was nice to be brought back to my childhood for a couple of hours.
While we were enjoying the movie, I made a small bowl of cereal – 1 Weetabix biscuit and 1/2 cup Kashi Heart to Heart with unsweetened vanilla almond milk. I had it in my cute new polka dot bowl!
And then came the part where I tried my first medjool date!
The verdict? While it definitely does look like a cockroach, I got over it and found that it really does taste like a caramel! I definitely think I will have to eat them one at a time because they are very sweet, but I really enjoyed it! I can’t wait to try one with peanut butter. Thanks again, VeggieGirl!
It was a fabulous night, indeed. Today I have a lot of studying to do for my last final, which I am taking this Friday. You would think I have time, but my mom is actually coming to visit (!!) and we have a lot of stuff planned, so I need to get a jump start! I’m also planning to have a little get-together with some friends before they leave for break. So much to do, so little time!
