The Lazy Chef: Humbecue Tortilla Pizza

Happy Hump Day! I know I say this every week but I am honestly always a bit surprised when I wake up and realize it’s Wednesday already. I’ve been somewhat of a busy beaver, so that’s probably why I lose track of time. But GOOD NEWS: my first health story airs tonight! I’m a little nervous because I’m used to being behind-the-scenes and haven’t done any real on-air reporting since my sophomore year of college. We’ll see how it goes!

I have a new recipe to share for The Lazy Chef! It was inspired by Miss Gliding Calm’s tortilla pizzas, but I changed up the ingredient list a bit. The combination of flavors came together quite well!

Humbecue Tortilla Pizza

Ingredients (serves 1):

Directions:

Start with a tortilla 🙂 “My, how ingenious of you, Jenn,” you might say!

Spread on 1 tbsp. hummus evenly across tortilla.

Add half of your spinach (approximately 1/4 cup) over the hummus.

Spread 1 tbsp. barbecue sauce evenly over the spinach.

Top spinach with three slices of deli ham (or alternative meat product).

Spread the rest of the spinach (approximately another 1/4 cup) on top of ham.

And finally – CHEESE PLEASE! Top the pizza with 1/8 cup reduced-fat Mexican cheese and 1/2 oz. feta cheese to give it that ooey gooey yumness.

Place the uncooked pizza into an oven and set to broil.

“Oooh, aaah,” you might say. Or not. Anywho, broil the pizza until the cheese is melted and starts to brown. For me, that was roughly four minutes.

Pull the pizza out of the oven and place it on a plate. Then stare at it in wonder and awe for approximately three seconds before cutting into slices and serving to yourself 🙂 Mm, a whole pizza just for you! Enjoy!

I really liked the taste of this pizza! It’s not your typical tomato-style because the hummus and barbecue sauce stay a little more liquid-y (for lack of a better word) than tomato sauce, which typically turns into more of a paste. BUT combining hummus and barbecue sauce together (aka humbecue) is fabulous and if you don’t want it on a pizza, you can always use it for other things!

**Please note my nutrition information is always based on the ingredients I used. I included brand names just in case you want to replicate it, but obviously you can use any tortillas, hummus or sauce that you want to use!**

  • 11g fat
  • 21g carbohydrates
  • 10g fiber
  • 22g protein

  2. I was a little confused by the AI website – but I’m guessing that they want to lower the drinking age back to 18? If that’s the case then I would support that. I do have to agree that when I was underage and had access to alcohol, I’m sure I drank more than I should have simply because I didn’t want to waste the opportunity. But, I also had parents who didn’t mind that I was “learning” how to drink so I didn’t always get crazy either. I think in the case of alcohol, it can easily be abused because it is so restricted.

  4. the hummus and bbq sauce sounds like a great combination!! we never have bbq sauce at home (none of us seem to use it) so maybe it’s time to break that habit…. not such a hardship after seeing this yummy creation!

I was confused untill i saw what you added.. i dont know how i feel about this because i think it mightbe one of those things that you dont know what the consequences will be untill it is implemented. I def think it is scary tho becuse it might mean kids will start drinking younger and younger

  7. mmm looks good! I’m actually not a fan at all of tomato sauce based pizzas so this is right up my alley! I never would have thought to combine hummus and bbq sauce–I’m glad it worked!

  8. yuuuuum!!! hummus and barbeque– i NEVER thought of combining them! sounds wonderful!
    as far as the initiative goes, i think kids are going to drink if they want to, no matter what the law is.

  9. This looks amazing. I can’t believe how far a tablespoon of hummus goes! And you did such a good job of perfectly spreading the BBQ sauce over the spinach. That seems hard!
    I didn’t look at the site, but I do think the drinking age should be lowered to 18. It makes sense, would prevent problems, and is respectful.

    P.s. That oven is just FANTASTIC. My toaster oven was free, and is tiny…that looks like a magic maker right there. As in magic fantastic recipe maker. …….uhh. (It’s 6am, k?)

  12. congrats on the health story! your pizza looks faaaaaaaaaabulous. i love ‘nontraditional’ pizzas yum! i totally think the drinking age should be the same as the voting age! so many kids i know in High School/college binge drink allllll the time and maybe this would go down!? who knows! but i hate that i can’t go to bars with all my 21yr old friends (im 20) even though i might only drink 1 drink or none at all but want to socialize! maybe i should invest in a fake haha

  13. My parents always let me have drinks if I wanted to, and from a young age I drank wine mixed with water. I think that since I grew up with it, I never felt the urge to binge drink. Of course I had my fair share of drunken moments during college, but I really don’t enjoy that feeling at all, and barely have a drink now.

    I think they shouldn’t make all these restrictions on drinking. The age should def. be brought down to 18, and although it will probably prove to be tragic at first, once that first round of kids makes it through it will be better for the next generation.

  14. Less problems if 18 year olds could legally drink? Makes sense? That is a disaster waiting to happen! Drinking and driving accidents will increase as with teenage deaths. Stupid!

  15. OMG Love! I just tried this for lunch and it was delish! Humbecue rules! I did a veggie version with hummus, bbq, spinach, thinly sliced tomato, some leftover roasted asparagus, and feta on a flat out wrap – superb!
