When I made my Humbecue Tortilla Pizza for the first time, I realized that the combination of hummus + barbecue sauce would make a great “dressing” on pretty much anything. Then I bought my first package of fish – salmon to be exact. I’m not a huge fan of tuna, so I was a little leery at first.
I always just associated these lil’ packets with that gross fishy tuna taste. NOT SO! Turns out, this stuff is the real deal if you like salmon. And I used the entire packet (3 servings = 42 grams of glorious protein) to make this:
Oh, it was as good as it looks 😉 Here now is the recipe!
Ingredients (serves 1):
- 1 entire package pink salmon (you can substitute any fish or protein you’d like!)
- 1/2 large cucumber, diced
- 2 tbsp. Bone Suckin’ Sauce
- 2 tbsp. chipotle hummus (H-U-M-B-E-C-U-E!!)
- Ground pepper, to taste
- Goya Adobo, to taste
Directions:
Combine first four ingredients in a bowl and stir until the humbecue sauce is evenly distributed. Pour onto a plate and top with as much pepper and Goya seasoning as you want.
It was delicious and filling, too! I’m glad that I found a new lunch that is quick and easy!
