Happy Monday everyone! Well, I guess it’s a little hard for me to say HAPPY Monday…but I hope you have a good one anyway 🙂
I’ve got to be happy about one thing though – my mom is coming to visit me today! I spent all of Sunday prepping for her arrival – which meant really cleaning my apartment the right way for the first time in…let’s just say a little while 😉 Bobby helped out a ton which was very much appreciated!
For breakfast I decided to do something a little more substantial. I made a batch of Ebleskiver pancakes that I posted about here again! These came out awesome! I had so much batter, but was able to make about 9 of these little guys for myself – I love how many you can get out of this recipe! Here are the first three:
I decided to stick a frozen blueberry in the middle of each one while they were cooking this time. I also added a mashed banana to the batter. The fruit made these extra sweet! Here are the second three:

I spent the morning cleaning but also played a little tennis. We had to stop because it started pouring, but I’m still working to get better and better each time!
I came back and was craving cold cereal for some reason, so I decided to open up a new box from Trader Joe’s! I tried out the High Fiber O’s – they were delicious!! I had a 1 and 1/4 cup of the good stuff with unsweetened vanilla almond milk, 1 tbsp. of flax, and some Trader Joe’s Nutz Over Raspberries and Chocolate trail mix!
There is just nothing that beats this trail mix. Others are quite good, but I think it must be the dried raspberries that really send me over the edge into food bliss 😉 I wish they sold those separately!!
I also made myself a mug of Coffee Cocoa:
The rest of the afternoon was filled with more cleaning and a workout at the gym – 30 minutes on the Stairmaster and a leg workout had me feeling pretty tired!
I decided I wanted something more savory and protein-packed for dinner. So Bobby and I made our own omelettes again!
I used three egg whites, spinach, andouille chicken sausage, reduced fat Mexican cheese, and feta cheese to make this one. The sausage added so much flavor – definitely a good addition!
Later on – while watching Lost! – I had some rice pudding (my favorite!) with some dried oats and Frosted Mini-Wheats mixed in. I love adding crunchy cereal/granola/oats on top of the pudding!
I wish I didn’t have go to work while my mom is here – but such is life 🙂 I hope you all have a great start to your weeks – “see” you again soon!

Wow, I need to buy an Ebleskiver pan!! I agree with VeggieGirl, those look so yummy!! I love your idea about putting trail mix in your cereal…I need to try that!
OKAY, those are honestly the C.O.O.L.E.S.T. looking pancakes E.V.E.R. Jenn! I get so excited every time you make them! I feel like no one knows of these delicacies but you, and well, now all of us lucky blog readers! (Sweet deal 😉 )
And your WF salad looks Incredible from the other day! I adore the WF salad bar like nothing else in the world! It’s my faaavorite meal (always!)
