Pancake perfection – take two.

My attempt at making Cheese Danish Pancakes went MUCH better the second time around. Perhaps you recall this delicious disaster from a week ago. Well, with a little tweaking of the recipe and a higher burner temperature, the outcome today was much more pancake and much less “bread pudding” (aka mush!) 😉

Here’s my version of the recipe (to serve one person):

  • 1/2 cup dry oats
  • 1/4 cup whipped cottage cheese
  • 1/4 cup egg whites
  • 1/8 cup unsweetened almond milk
  • 1/2 tsp. vanilla
  • 1/2 large banana, sliced
  • 1/2 tbsp. chocolate chips
  • 1 tsp. maple syrup

Combine the first five ingredients in a bowl. Grease a skillet (or big pan in my case) with cooking spray and set to medium high heat. Add batter to get desired size of pancakes. While cooking, place the sliced banana and chocolate chips in the wet batter. Flip when ready (or fold into a batter “taco” a la Kath). Drizzle the finished pancakes with maple syrup, and voila!

I made two real pancakes and one “batter taco” (shown above with a deliciously melted chocolate chip peeking out!) – all for 330 calories, 21 grams of protein and 6 grams of fiber! Most importantly, they taste incredible :mrgreen:

Workout

I started out my morning with 1/2 a Clif Chocolate Brownie ZBar and a trip to the gym – 40 minutes elliptical and a 20 minute arm machine workout. I am energized, fueled and ready to take on a day of class and NNN! The weather forecast may be cloudy, cool, and rainy, but I’m going to do my best to ignore it 🙂
