I have been living under a rock. No, seriously.
Ok, not seriously. But I have seen Annie’s Goddess dressing raved about on countless blogs over the past few months and have often wondered if it could really live up to all the hype. Well, I am officially a believer!
The salad is nothing elaborate. I didn’t have much on hand to add to it other than spinach (produce is on the grocery list!). But I think I could have just ate the dressing by itself and still be plenty satisfied. Either way, drizzled on top of spinach, it was so flavorful and delicious! I can’t wait to make bigger and better salads with it and feature it into more of my dinners!
As for the rest of dinner, I had a serving of Annie’s Whole Wheat Shells and White Cheddar with some reduced fat Mexican cheese mixed in and sprinkled on top.

And after that I decided I was still hungry, so I had some whole wheat mini pitas with hummus.
Mmm…the best meal I’ve had at home in a while – everything had so much flavor!
After dinner I went to the gym and did some cardio. When I came back, I couldn’t decide whether I wanted fruit or ice cream, so I took the easy way out and had both!
There’s Edy’s Slow Churned vanilla ice cream hiding under all those blackberries! These berries were especially ripe – I couldn’t get enough of ’em!

I’m glad to see we are all in agreement that shortened toes and missing belly buttons are not what we should be spending our money on 😉 There is so much more to life! I’m currently reflecting on my last night as a 20-year-old and wondering where all the time has gone! There is no way I would want to spend my precious free time worrying about altering how I look – I’d rather be cooking, eating, or reading blogs
Tomorrow promises to be a great day! Bobby got us a tee time at a local golf course for my birthday! I love golf – I played on my team in high school and in tournaments during the summers, and now that I’m in college I miss it so much! I will be sure to take plenty of pictures!

As good as they dressing may be, I cannot give up my amy’s sesame ginger flavor – AMAZING.

Jill – No overdoing it! I’m not a big drinker, so my 21st is probably not as monumental as it is for others. I may have to have a margarita or something though, just because I can…legally 🙂
