This day was busy indeed! A full day of classes, a full day of work, and a fully enjoyable nighttime workout made it fly by! Now, onto the food š
LUNCH
I had a craving for cheese quesadillas for lunch today. I used two La Tortilla Factory Garlic & Herb wraps with about 1/4 cup fat-free Mexican cheese melted between them. I broiled the quesadilla in the toaster oven for about 5 minutes, and lunch was served! I topped it with some Tostitos mild salsa – muy bien!
I cut the quesadilla up as small as possible to get the most “volume” out it!
On the side I had a big bowl of spinach drizzled in Annie’s Goddess dressing. I can’t get enough of this dressing – I’m so glad I finally tried it!

SNACK + DINNER + WORKOUT
I got back from my classes in definite need of a snack, so I went with some Trader Joe’s High Fiber Cereal mixed with some Nature’s Path Rice Puffs and heated up with unsweetened vanilla almond milk.
I did some work and then went out to dinner with the roomie to our usual, Panera. I got the French onion soup, Greek salad with chicken, and a whole grain baguette. Shocking, I know – but delicious of course!

And the Greek salad with chicken, tomatoes, red onion, kalamata olives, pepperoncini and feta!
After dinner I headed to the gym for a refreshing workout – 45 minutes on the elliptical, plus an arm machine workout. I definitely like the morning workouts better, but sometimes it’s nice to just expend all the energy and stress that has built up throughout the day with an evening sweat session š

I’d like to say a big THANK YOU!!!!!!!!!! to my Aunt Diane for giving me such a wonderful birthday present! I saw it here on the Williams-Sonoma website and thought I could probably find many uses for it!
It’s called an Ebleskiver pan, and is mainly used for making delicious-looking eats such as these:
They’re pancakes, but they sort of remind me of dumplings! They look scrumptious!! But I thought there could probably be several other uses for it – Cheese Danish pancakes and poached eggs are some of the ideas I’ve come up with so far. I can’t WAIT to use it – THANKS AGAIN AUNT DIANE!!
Does anyone else have an idea for something that could be made with this pretty pan?
I’ve got a bit more work to do before I crawl into bed!
