Eat Me…Plz!

That heat wave sure didn’t last long! Today was chilly, rainy and very blustery. I suppose it’s still winter, after all, so I shouldn’t be too shocked 😉 At least all the snow is gone now! I’m keeping my fingers crossed that it won’t come back.

I’ve recently decided that on days I have to work, I’m saving my workouts for later in the day. Although I love the morning rush, it’s better for my sanity to get extra sleep! I woke up and leisurely got ready, then broke the fast.

I had a 1 egg + 2 egg white combo with spinach and reduced fat Mexican cheese melted over the top. The addition of 1 egg yolk makes a huge difference. It has so much more flavor.

I also had a slice of toast topped with whipped butter.

Then I made a quick mug of Coffee Cocoa and hit the road, Jack!

Work was crazy! No, not really 🙂 I just read through some recipe proofs and entered some information into the database. Mid-morning, I snacked on a Quaker True Delights bar.

I’ve tried the coconut macadamia nut flavor already and really liked it. The second round went to the Honey Roasted Cashew Mixed Berry (what’s up with the super long titles?). Here’s what it looks like out of the package:

I liked it, but I didn’t love it. The fruit pieces were a little too sweet for me, and that’s coming from someone who usually loves sweet things. Maybe it was the fact that it was combined with honey? The cashew pieces were by far the best part about this bar. I’ve still got one flavor left!

When I got home from work, I found this at the door of my room:

“Wholesome” goodness?! Well, we all know that can only mean one thing, right? Of course, I immediately threw down my bags and ran to the fridge, where I found this:

My roomie is the best Valentine, ever! She got me a vanilla cupcake from Whole Foods, complete with pink sprinkles and a heart gummy candy. HOLY YUM!

My mouth is watering all over again! Needless to say, my original lunch plans went out the window and the key component became the cupcake. I divided it into fourths to make it last longer, but it was still gone way too quickly! Here’s a look at the inside:

Heaven! I haven’t had a cupcake in SO. LONG. They are just as good as I remember them 😉 Although, how could it not be considering where she bought it from?! Thanks, K!

To accompany the cupcake (ha, yes, the cupcake was my main dish – don’t judge!), I had a simple salad.

It consisted of spinach, deli turkey, hummus and barbecue sauce. Shout out to my bloggie sista Caroline, who I noticed also had both a cupcake and the humbecue combo recently. Twins!

I was super full after this one! I let my tummy relax for a bit while catching up on my blog reading. Then I headed to the gym for some cardio: 30 minutes on the Stairmaster and 15 minutes on the stationary bike. I was going to do a P90X workout today, but then realized I had my ballroom dance class with Bobby. I raced back home to get dinner ready instead. What did I make?

Gliding Calm Tofu Fries! Inspired by Miss GC herself and Miss Sarah, who was FRY-FREAKIN’-TASTIC last week, in case you didn’t know! I made these while I was getting ready for dance class, then saved them for later.

Ballroom was so much fun tonight – much more of a workout than ever before! We finished up our swing and fox trot lessons, then started the waltz and cha cha! It’s so cool to learn the beginning moves to so many different dances. I am a complete novice and believed I had two left feet…but I’m slowly starting to get it! It helps taking it with Bobby 🙂 The class literally flies by and I’m so sad when it’s over!

When I got back, I had 1/2 of my tofu fries:

And then I made myself a big bowl of carbs: 1 cup Nature’s Path Puffs, 1 cup Kashi Go Lean, 1 cup unsweetened vanilla almond milk, and a sprinkle of berry granola.

Now I’m feeling completely rejuvenated…but stinky! Yes, I am writing this post before I shower. Altogether now:

  1. That is the BEST wholesome goodness. Hehehe… too bad about the yucky weather though. If I could motivate myself to work out later in the day I absolutely would, but I know that if I move workouts from the morning to night, they don’t happen =/ Love your bowl of carby carbs 🙂

    Glad dance class was good! My sister in law and her husband took dance classes before they got married so they could *actually* dance and look good doing it at the wedding. They actually got their dance teacher to come teach a dance lesson at the reception while they were finishing up pictures – so fun!
