**Posting yesterday today – sorry for the delay**
Wednesday is almost over.
Which means it’s sort of Thursday. Which means Friday is only one day away
There are always two sides to that chain of logic. Part of me feels like I’m always wanting the weekend to come, but then I start to think about how if I’m always looking ahead, I forget to enjoy each day and then summer is over and I’m back in school and looking for a job and getting ready to graduate and going out of my mind wondering why the time flew by so fast!
Perhaps this is a little too much thought to be devoting to this topic! There are better things to discuss, like…oh I don’t know…FOOD!
BREAKFAST
The great thing about this breakfast is that it’s exactly what I had yesterday – so you can still see what I ate, even though the evil camera ate my pictures:evil: I started out with 3/4 cup Puffins cereal with 1/4 cup unsweetened vanilla almond milk.
The huge bowl makes the portion look so small! Here, how about a close-up;)
Much better. Anyway, I also had incredible microwaved poached egg whites. What made them so incredible was the fact that I stuck an entire wedge of Laughing Cow cheese in the liquid whites before I microwaved it. The cheese melted inside the egg whites and permeated every bite. This is what the egg looked like on the outside.
And here’s what it looked like in the middle (sorry, I know it’s not exactly appetizing – but really it tasted wonderfully cheesy)! You can see the cheese wedge in the middle with the garlic and herb specks. I highly recommend this combination because it provides great flavor and plenty of protein!
Then of course there was Coffee Cocoa. Although I couldn’t finish it because I started to get way too hot! Sometimes it’s a little too much on a warm summer morning.
MORNING SNACK
And now the moment that many of you have been waiting for. Today’s the day I finally tried the Peanut Butter Cookie LARABAR!
This flavor is one of the newest out there. Since I’ve been doing it all week, here again is the description from the LARABAR site:
“Smooth, moist and chewy, you’ll swear you’re eating a cookie just out of the oven. Peanuts, one of the few food sources of Vitamin D, also contribute more than 30 essential nutrients and phytonutrients, such as protein, Vitamin E, magnesium, phosphorus and manganese. Dates and salt impart a sweet, savory flavor, along with Vitamin E and 16 essential vitamins, minerals and electrolytes. Each bar also provides 3 grams of heart-healthy Omega-6 fatty acids.”
I honestly find it so hard to believe that I didn’ t like LARABAR the first time I tried it. Maybe there are just some flavors that are not for me. But this peanut butter cookie? It honestly tasted like a cookie! I’m not sure how the people at LARABAR do it because every one of these bars looks the exact same, but they managed to change up the flavor again. It was melt in your mouth, peanut buttery goodness!
LUNCH
I had a lunch meeting today, so I don’t have a photo for the main course. But let me tell you, it was one of the best turkey sandwiches I’ve ever had. I’m completely serious – I really have never eaten any sandwich that was quite as good as this one. There was no label so I have no idea where it came from, but it was your basic turkey, tomato, muenster cheese and lettuce plain on an amazingly seedy wheat bread. I wish I had a picture to show you how great it was. Who knew that a catered lunch would present me with the best sandwich I’ve ever eaten? It was really high-quality – I must find that deli!
When I got back to my desk, I was still a little hungry, so I broke out the other snack I had brought for the day. Two Quaker rice cakes with some Better ‘n Peanut Butter spread.
AFTERNOON SNACK
It was cold in the office again today – brr! I decided to opt out of spending money on a mocha, so I made myself a free cup of hot chocolate instead.
This completely hit the spot. And I absolutely loved the blue background in the photo. I’m totally going to do that all the time now:)
DINNER
By the time we got home from work, Bobby decided he wanted Chinese food for dinner. So we headed over to Pineyard, a restaurant I’ve mentioned in this post here. It’s one of my all-time favorites, so it was exciting to go there on a Wednesday!
We started out by splitting a large bowl of egg drop soup. Here’s what my smaller bowl looked like:
For dinner, we split the Three Delicacies again. That means that I get the chicken, Bobby takes the beef, and we both split the shrimp. We also split up the broccoli, mushrooms and red peppers.
It was a big plate of food, but I ate every bite:) I also had a small spoonful of sticky rice on the side. The dish was made with a szechwaun sauce and had incredible flavor throughout.
And of course, it wouldn’t be the full experience without one of these:
Apparently, one of my friends is soon going to reveal an “exciting secret” – ooh, can’t wait for that one! At least it was sort of a fortune, though. A lot of cookies these days fail to live up to the “fortune cookie” name.
After dinner, Bobby and I went to the gym. I did 40 minutes on the elliptical and an arm machine workout. Afterward, I came back and refueled with a juicy mango.
I actually wasn’t 100% sure on how to cut this one. It was my first time eating my own mango! Oh well, it still tasted good. And I ate it on a new plate from Urban Outfitters, so it wasn’t a total loss;)

What a fabulous day of food- you are so healthy and balanced! I really wish my WF carried that peanut butter flavor- it sounds like that best thing in the WORLD.

Without a doubt you will be seeing microwaves eggs tomorrow with laughing cow cheese on my blog tomorrow morning. WHY HAVE I NEVER THOUGHT OF THIS FABULOUS COMBINATION?!?!
And how in the world did you get your mango to look so clean? When I try to eat/slice mangos they end up looking like I shoved the thing in a blender for a few seconds or hacked it up with a blunt butter knife.

Your mango is so pretty. I don’t think you really NEED to know how a cut a mango. It’s good anyway. I like to eat the skin too…as long as it isn’t bitter, which it usually isn’t! Extra fiber too!!

I totally know what you mean about always looking ahead. I do the EXACT same thing and is something that I’m really trying to stop. I end up just wishing away time. My yoga instructor actually brought up a similar point in class tonight that really made me think. She talked about how in yoga many people just focus on the actual postures rather than the whole process of getting into a posture and moving between postures. The breathing and the flow is just as important as the actual pose. We all need to appreciate the moments leading up to big events (aka “the little things”) because these are just as important and special as the big moments. In fact, looking back we usually do wish that we remembered the little, simple things in life.
Let’s make it a goal for the rest of the summer to really try to appreciate things WHILE they are happening rather than wishing the time away and the undoubtedly looking back in regret that we didn’t savor the small stuff.
And now about your fortune:
Here is an exciting secret (well not really a secret, or too exciting actually…) but the best way I’ve found to cut a mango is by using a vegetable peeler and peeling the skin away. Then using a big knife to cut the mango away from the pit (be careful, it’s really slippery!) and finally cutting the mango into little chunks. And the best, best, best part is sucking the pit (that’s the ripest, sweetest part!) I actually learned this technique from katheats.com–she even has a video!
You have NOOO idea how excited I got when I saw that pb larabar!!! It’s become my mission to find one (which could be difficult, I’m in Canada…) and your chinese food looks awesome too π

I think the snack size Larabars are good as a morning snack. I tend to want my morning snacks to be a bit smaller because I eat them so close to lunch. My afternoon snacks tend to be a bit larger nutrition-wise because it has to hold me longer until dinner. Good question!
