Congratulations to Bob Diesel

Bob Diesel = Erin’s nickname for Bobby 🙂 She rocks.

I just have to take a minute to congratulate Bobby (for those of you who have no clue who I’m talking about, he is my boyfriend) on his NEW JOB!! It has been a long and painstaking job search for both of us. There have been a lot of uncontrollable setbacks thanks to Mr. Economy, but today, Bobby got the news he has been waiting for and accepted a position at one of his top choices! It looks like life in the Windy City is going to continue on after graduation! Now I just need to snag myself one of those job thingamajiggies…fingers crossed.

Apart from that hella exciting news, today was pretty uneventful. It was MIGHTY cold outside (at least -20* windchills), but that didn’t stop me from walking roughly 2 miles across campus (up and back) to my classes for the day. I was covered from head to toe, but I still felt a little tingly when I got back into the warmth. Before class, I had a very pleasant morning. I woke up around 7:30 and made myself a pre-yoga breakfast (yes, I did an entire yoga lesson for the FIRST TIME EVER).

I started out with a small bowl of cereal that consisted of 3/4 cup Kashi Heart to Heart, 1/4 cup unsweetened vanilla almond milk and 1/2 sliced banana.

I also had a mug of Decaf Coffee Cocoa for fuel. I’m all out of regular coffee, so I need to stock up again in order to get my morning jolt!

Once I finished breakfast, I popped in today’s P90X series workout: Yoga X. I love how all the names have an “X” at the end. It makes me feel like a body builder 😉 But basically, it was a very intense yoga session! I did ashtanga, vinyasa, up/downward dog, warrior pose, etc. etc. for 1 hour and 30 minutes! Considering I’ve never done yoga before (except for part of the Cardio X workout on Tuesday), this was a bit intense for me. I’m not gonna lie, I had a little a lot of trouble with some of the poses. But now that I’ve at least seen and tried everything, I feel better about “the next time.”

I definitely enjoyed doing yoga first thing in the morning. The deep breathing really made me feel at ease. Now I know why it’s so popular in the blogosphere! Namaste 🙂 Once I cleaned up, I made myself another small breakfast to get me through a grueling walk outside and 3 hours of classes.

I paused after this picture to reflect on the irony of the plate that I used. This meal was the opposite of chocolate chip cookies! It was the same as yesterday’s lunch, which included an AmyLu Sun Dried Tomato + Basil chicken sausage topped with organic ketchup

And 1/2 cup of whipped cottage cheese. I totally feel for those of you who said they can’t find this cottage cheese anywhere. I’ve only been able to find it at one Whole Foods near my school. I think we need to send a letter to the Friendship company, don’t you?

I also couldn’t help but snag 1 tbsp. of peanut butter straight from the jar! Normally I don’t take pictures of that kind of thing, but today I thought I’d mix it up for your viewing pleasure.

Then I began my frigid cold trek to class. I’m hoping that this will be the coldest week of the year because that means the end is in sight! Luckily, classes were interesting and definitely worth going to! Toward the end of my last class, my tummy started grumbling, so I pulled out a new Luna bar flavor (for me at least): Cookies ‘n Cream Delight.

I couldn’t get a picture of the bar itself because I was in class, but it’s the same color of an oreo with a layer of “creme” frosting. I have to say, I really liked it! If you can’t tell from the lack of Luna bars on this blog, I’m usually not a fan of this brand. Something just tasted “off” to me every time I bought one. But I had a coupon last weekend so I picked out a flavor I had yet to try, and I thought it was great. I’m glad I’ve found at least one that I like. I may have to give them another chance after all.

After class I went to my school’s winter career fair and talked to a couple of companies. By the time I got back, I was hungry again, but decided to make today a “mini meal” day, so I kept it small with some Kashi crackers and a part-skim mozzarella cheese stick.

And then I had another small bowl of Kashi Heart to Heart.

I was feeling a little energized for some reason and really wanted to take some time for myself out of a busy day, so I decided to go to the gym and read some of my fitness magazines, which have been piling up for weeks! I did 40 minutes on the elliptical with Women’s Health and felt glorious afterward.

I came back from the gym and had limited time before I had to be out the door again, so I continued my “mini meal” day and had dinner in parts. Part I was a container of Fage topped with 1 tsp. of maple syrup.

Then I went and ran crew for the sports newscast, which basically entails me pressing “Play” and making sure the right video runs at the right time. Once I came home, I made Part II of dinner, which included a Quorn cutlet smothered in Annie’s Smokey Maple BBQ Sauce.

Plus 2 egg whites with 1/4 cup spinach, a handful of reduced fat Mexican cheese and a massive amount of feta. I accidentally dumped the container out and most of it went piling into the bowl! It tasted extra cheesy, which wasn’t a bad thing!

And to end the evening right, I had one of my new all-time favorite desserts of rice pudding and Ghirardelli. I crumbled the chocolate a little bit to savor it even more – yum!

Random Question

Do you have any phobias?

I am eternally afraid of spiders. It doesn’t matter how big or small they are: I freak out when I see one! Over winter break, there was a medium-sized spider on our wall, and I started crying. And another time, when we were golfing, I almost stepped on a tarantula.

Typing that out just made me shiver.

    I don’t have many fears, but I do worry about what other people think of me. Hopefully I will continue to overcome this.

    I don’t think I have any phobias. I’m not a huge fan of spiders…but I wouldn’t say I have a phobia. 🙂

    Hmm…I don’t like spiders either…I hate gross public bathrooms. Like, I will seriously not pee for HOURS if the bathroom is in horrible condition. It just freaks/grosses me out!

  6. Congrats to Bob Deisel. You need to do some celebrating! I love your cookie plate! I’ve tried the whipped cottage cheese and did quite enjoy it. A v. healthy alternative to ricotta cheese as well. I am glad you liked yoga. Now that you know you like it, you should hit up a studio! A teacher will help you with you r alignment in the trickier poses. Stay warm!

    Second, that is the way to do it girl with the fueling up all day long! I could learn a thing or two from your masterful mini meals.

    Third, I am TERRIFIED of cockroaches. When I was in college (that makes me sound so OLD), our dorm had roaches the size of cats and now I freak at even the thought of them. I just shuddered, no joke. I’m going to go eat a medjool date now.

    I swear I have a phobia of vomiting. It’s true. I fear myself puking and I fear being in a situation where I might witness another person vomiting. Just typing this makes my head hurt 🙁 I don’t know why!! I haven’t been able to get into Biggest Loser because they always show someone getting sick! It gets to a point that I don’t like putting myself in certain social situations – that and the fact I’m an introvert.

  16. Yay for Bobby (aka congrats, haha)!

    My phobia is definitely needles of any kind — shots, needles for piercings, etc. I passed out when my ears were pierced (with the gun, for crying out loud) and could never take out/put in earrings; I always made my mom do it. Now I haven’t worn earrings in years because I realized how ridiculous that was. And when I had to get shots to study abroad (3… it had been a while) I Passed out with the first one, then had a mini-panic attack with the last two. Kinda frustrating because it’s not like I think they hurt, it’s just the idea of the needle piercing skin… *shudders*… I’m done now.

    As for phobias, I am SUPER afraid of needles. I do have lots of tattoos though..it doesn’t really make sense. I’ve gotten better with the fear of needles as I’ve gotten older but it’s still pretty intense.

    I have a fear of throwing up …its kind of odd, but I have nt thrown up since probably first grade and its just this wierd thing that I’m afraid of haha.

    everytime i hear about these workouts i get more and more tempted….
    as far as phobias go, i’m DEATHLY afraid of medical procedures and needles. i have to have the pilot or a friend go with me everytime i need something done to make sure i don’t start bawling and leave. i’m supposed to get blood work done but i told my friend jeni that unless they send edward cullen in, no one is taking my blood.
    blood is another story.. i pass out every time i see it

    I find something “off” about the luna bars too! I think it’s the crispy rice that tastes weird. That flavor is okay though. My little brothers love luna bars haha

    I’m afraid of heights, falling, and bugs in general. I’m shivering just think about it too!

  23. i am PETRIFIED of snakes. sometimes i’ll see a string or shoelace or something on the street, think it’s a snake and scream and run in the other direction. it gets embarrassing at times ; )

    i actually HATE the whipped cottage cheese which is so weird because i love regular cc and everyone else seems to like the whipped better. i guess i’m a rebel or something!

    I eat the same exact kind of PB – LOVE IT.

    I’m afraid of heights. It’s a weird sort of phobia though that I only notice when I’m on a giant cliff or hiking – or that sort of thing. When I get on rides at amusement parks I’m fine. But I think that’s because I close my eyes until it’s over?

  26. Congrats on the new job for Bob Diesel 🙂 That’s exciting – I know it’s hard to find one anywhere right now.

    Phobias:
    – fish or other animals touching me while in the ocean or a lake – yuck

    – car accidents. I use my “brake foot” when I’m the passenger all the time because I get so paranoid. I had a best friend and his mom who died in a car wreck, and this didn’t start until after that.

  28. I am SO with you on spiders. Just typing the word gives me the shivers! My hubby learned long ago that when I call him using a certain “tone” to just come with a kleenex. You couldn’t get me near one for any amount of money! EEEWWW!!!

    I wish we had whipped cottage cheese around here! I was thinking about that this morning when I grabbed my regular stuff for my sweet potato! On the drive in I was pondering if there was a way to ‘whip’ it myself! lol

    omg you saw an actual tarantula in the wild? That’s crazy! I’ve always associated them as being people’s pets, it never occured to me that they were wild! haha! My boyfriend would freak he can’t deal with spiders at all! My phobia is worms, earth worms, meal worms, maggots [sorry] they freak me out and I always have nightmares involving them!

    I used to have a HUGE phobia of bugs. All bugs, even the little tiny ones. Over the past year or two though I have gotten less afraid of them. The little ones don’t bother me anymore, and some other common ones (like bees) don’t freak me out as much either. I am still iffy on spiders though.

    As much of a CC fanatic I am, I have never had the whipped kind!

    I don’t have any REAL phobias (like shaking, crying, hyperventilating, etc.) but I don’t like heights or snakes – yuck!

    Umm… phobias? I think its one of those things where I don’t realize I have a phobia until I’m face to face with it and am deathly scared at the moment. I did get made fun of in college becuase I was scared of closed shower curtains. I HATE that you can’t tell whats going on on the other side of the shower. My room mates used to sneak in to my bathroom adn close mine when I was at school and when I came back I woudl freak out. not cool people!

I also have a LOT of trouble with yoga poses, it can be really discouraging sometimes because its soooo much harder than it looks. I have kinda a phobia…i am a total germaphob, I didnt get this way until after I took microbiology in college

    and i’m deathly afraid of ants…i find one, and i go on a rampage to find out where they came from, stuff up the entrance, spray the dickens out of it and clean everything inside from head to toe. one time, i was camping and my tent was accidently placed on an ant hole…w/in a few minutes the whole outside was engulfed while i was on the inside and i started crying to get me out. hahaha.

    I feel your pain about the cold–I had class from 8am-6:30pm all across campus in the frigid weather. So much fun huh?
