During the month of May, Bobby and I have been attempting to make more of an effort to branch out and try new recipes. Although our schedules have been insane, we have had a few opportunities to make our goal a reality. One such occasion was last week, when we tried our hand at turkey burgers.
That’s not a burger, you say? Well…that’s true. The burger part of our endeavor was a bit of a flop, but now we can at least say we tried and be more prepared next time around!
Below is the recipe we followed, along with our thoughts on what went wrong.
Not-So-Burger-y Turkey Burgers
Ingredients:
- 1.5 pounds ground turkey
- 1 large egg
- 2 tbsp. ketchup
- 2 tbsp. mustard
- 1.5 tbsp. Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground pepper
Directions:
Grease a large saute pan. Mix all of the ingredients together in a bowl until well blended. Form turkey mixture into patties and place each into the pan, leaving a little distance in between.
Clearly, we made some incredibly large burgers (three in total). We think this is where the problem started. As the burgers began to heat up, the bottoms started to burn, but since they were barely cooked through, it was nearly impossible to flip them in one piece.
You can already see we were headed for trouble. Eventually, we had to concede defeat.
Ground turkey it is! We meant to do that all along… 😉 We brought out the Arnold Sandwich Thins and created “burger-like” portions for each of us.
We kept the spirit alive by adding the usual toppings: cheese (Swiss), lettuce (spinach), tomato, ketchup and mustard. Do you like the nice swirl design going on with the condiments?
Most importantly, the taste was still there. Although it was impossible to eat this as you would a real burger — we quickly pulled out the forks — the recipe itself was great. If we make them into smaller patties next time, I’m sure we’ll be all set!

Ah well, at least it tasted good! I find that making the patties flatter helps a lot (you’ve already figured that out, though!) and also you can try adding about 1/4 cup breadcrumbs next time and see if that helps! 🙂

I definitely think the key to turkey burgers is making them thin. Turkey is definitely not as hardy as beef–I also like cooking mine in the George Foreman..it holds em together well!

i made some black bean burgers a few months back that were good but fell apart after a few flips…i ended up having to bake them and they didn’t fall apart!
Ooh — baking is a great solution! I can handle putting them in an oven if they’ll handle the cooking and not falling apart. 😉
