Breakfummus, Lunchummus + Dinnummus

Once again, thank you all for being so supportive and understanding of my insane schedule. I knew you would be, but felt it needed to be said, nameen? (Seriously Erin, I think you need to make a “Dictionary” page of all your phrases because they are contagious!)

In case the title of this post made no sense to you, I’d like to announce that I literally ate Sabra Roasted Red Pepper Hummus at every meal today. I think it’s become my new peanut butter, since there’s no fear of salmonella 😉 Or else it’s just that good.

I woke up early this morning and did 40 minutes on the elliptical before coming back home and doing the Ab Ripper X video for P90X. I opted to do the elliptical over the Yoga X for this week mainly because I could use the extra reading time that the gym provides. After cleaning up, I made myself some breakfummus: my first-ever egg wrap!

I’ve seen these all around the blogosphere and have always told myself that I want to make one. Today was finally the day. I scrambled 1 egg + 2 egg whites in a skillet with 1/2 cup spinach. While it was cooking, I spread 2 tbsp. Sabra hummus onto a La Tortilla Factory wrap and sprinkled it all with 1 oz. fat-free feta cheese. Then I dumped the egg on top and rolled it all together. So easy and so filling!

With Coffee Cocoa on the side, it was the perfect way to refuel for the day.

Today was my full day of classes. Everything was going just peachily until psychology, when it was announced that I would be next up on the individual article presentation. It’s not a huge project, but that means I need to make 2 PowerPoints and write 1 paper this weekend – eck! During my last class, I snacked on a Pure Protein bar.

When I arrived home from class, imagine my surprise (and happiness!) when I found a package of goodies awaiting me on my doorstep. I opened up the box and found…

VEGAN PEPPERMINT FUDGE BROWNIES from Allison’s Gourmet, courtesy of Miss VeggieGirl! She knew I was having a rough couple of weeks and is such a sweetheart for sending me these. Thank you so much, girl. You have no idea how much a gesture like that means to me! Of course I had to snag a piece right away (before lunch, obviously).

They are amazing. The peppermint is fully infused throughout the brownie and the rich chocolate melts in your mouth with every bite. I have a feeling these will go quite quickly once I share some with Bobby!  Brownies are one of his favorites! Thank you, VeggieGirl!!

After the chocolate fest, I made myself lunchummus. It was simple and small, but I wasn’t as hungry after the protein bar and brownie so it worked. It included 1 large red bell pepper with 2 tbsp. Sabra hummus (aka the star of the show).

The rest of the day was spent working on my Whole Foods project. Which reminds me…thank you for all of your creative answers to my question yesterday! I am going to incorporate them into my “consumer” slide to give some real-life opinions to the presentation.

Before I knew it, it was almost time to head to the studio to crew the sports show. I decided to make myself a small dinner knowing I could have a snack later on at night. Spreading out meals that way is nice when I know I have to eat early. For my dinnumus, I broke out a new product.

I cooked these veggie “chicken” tenders up in a skillet for roughly 5 minutes, flipping them every other minute. Let me tell you, they made my kitchen smell amazing! I love lemon pepper chicken (the actual chicken), so I was excited to see if these tasted any similar.

You must try these!!! I made the entire box (2 servings worth) and it was just the right amount of food! They are slightly high in sodium but no different than soup, and the flavor is incredible. I swear with the right seasoning you can’t tell the difference between these and real chicken. Delicious.

I also had a slice of Arnold Bakery Light bread topped with…hummus!

After I got back from crewing the sports show, I made myself that snack. The idea was courtesy of Meghann who got it from Melissa 🙂 Orange + nut butter!

I had a blood orange – for the second time ever…I really like them! – and 1 tbsp. of Crunchy Barney Butter, which I received in the mail free of shipping thanks to Heather + Mark. I really liked the combination and will definitely have it again.

  6. Oh man Sabra hummus is THE BEST! The jalapeno one is especially good if you like spicy.
    Your blood orange snack looks good too. I gotta pick some of those oranges up now that they’re in season 🙂

    Loving the egg wrap. And I fully support hummus at every meal. Hummus is definitely a staple food. I love it. I need to try Sabra though, I think I’m seriously missing out and I’ve managed to find it at one grocery store around here! So next hummus purchase (I still have three! containers in my fridge to get through) will hopefully *crosses fingers* be some SABRA.

    I want to try more flavors, because some of them sound amazing. I’ve so far tried classic, lemon, olive, and roasted garlic. They’re all honestly amazing!! I’m so addicted
