Breakfast Challenge: Day 4!

It’s Heritage Day on the challenge ๐Ÿ™‚

I found this information about Polish breakfasts. I guess I fit in well…

The traditional Polish breakfast is a substantial spread with a variety of side dishes eaten with bread or toast. These side dishes could include cold meats, meat pastes, kielbasa (the polish sausage), sardines, tomatoes and sliced pickles. The favorite breakfast cheese is Twarog, a native cheese that can be eaten plain, with salt, sugar or honey. It can also be mixed with chives or sardines into a creamy spreading cheese. Eggs are often served as a main item, mostly soft boiled or scrambled.

Various jams and preserves are popular for a quick breakfast and either coffee, milk, hot cocoa or tea are all consumed for breakfast. During cold winter months hot oatmeal, sometimes with cocoa added, is often served. Fried meats or potatoes are rarely found and emphasis is placed on variety to satisfy everyone.

Wouldn’t you know it, I have some of that in my kitchen!!

BREAKFAST

For breakfast I followed the side dish and toast rule. I had two slices of Arnold Flax & Fiber Bread toasted and spread with Smucker’s strawberry jam, along with a microwaved poached egg mixed with some reduced fat Mexican cheese.

I love the Arnold bread! It is sweetened with a little brown sugar and just tastes so good!

I’m also a big fan of microwaving the liquid egg whites. It’s a trick my roomie taught me – can’t taste a difference and it’s so much faster and easier to clean up!

To wrap up breakfast, I had the usual Coffee Cocoa – in my Smarty Pants mug to provide added encouragement for the MAJOR PAPER WRITING I did today!!

LUNCH

I finished off my Polish heritage breakfast at lunch. I made a packet of instant oatmeal and added flax, wheat germ, and a spoonful of Dark Chocolate Dreams. I’m not sure that they have PB & Co. in Poland – but who says we can’t make some minor adaptations? ๐Ÿ˜‰

I also finished off my spinach, mushrooms, and Annie’s Goddess dressing:

DINNER

Dinner tonight was a slight adaptation to my Egg McMuffin creation from yesterday. It was actually more like a Greek McMuffinno egg, just some sliced deli turkey and fat-free feta cheese!

On the side, I had a serving of Kozy Shack’s rice pudding cups mixed with 1/4 cup of TJ’s High Fiber cereal! A sweet treat that actually tasted more like a dessert than a “breakfast” accompaniment ๐Ÿ™‚

I LOVE rice pudding. The jumbo-sized Whole Foods near my family’s house actually makes its own rice pudding that comes in vanilla, chocolate and lemon flavors – can’t wait to get me some of that in LESS THAN A WEEK OH MY GOODNESS CAN YOU TELL I’M EXCITED TO BE DONE WITH SCHOOL?!

One more day left in the challenge! It’s definitely been a fun one, and I’ve made some new creations along the way that I will turn to again and again!! :mrgreen:

    Sweetened bread is such a good idea–you can eat it plain or with things added to it!
    Chocolate for breakfast = enough happiness to keep you going for the rest of the day! :mrgreen:
    And rice pudding IS sooo good~you’re so lucky to live by a whole foods that makes those! Lemon flavored rice pudding sounds really intriguing!

  5. MMmm greek mcmuffin! What a great idea, I love greek food, especially when it contains feta, so that’s going on the ‘to try’ list that I’ve generated in my head ๐Ÿ˜‰

    The microwaving egg whites strategy is a grand one isn’t it? Makes for a perfect quick meal/snack!
