Breakfast Challenge: Day 3!

I woke up early this morning and got in a nice workout – 45 minutes on the elliptical, plus some ab work.

BREAKFAST

I made myself a nice bowl of instant oatmeal – the Quaker Maple & Brown Sugar flavor. I used 1/2 water and 1/2 unsweetened (you guessed it) chocolate almond milk. I also had a spoonful of crunchy almond butter.

What I’m about to say my come as a shock to some of you, but I really don’t think I like almond butter – at least not as much as peanut butter. Maybe I bought the wrong brand (Whole Foods 365), but it didn’t impress me – and I really like almonds!

With my oatmeal I had a mug of Coffee Cocoa – though I didn’t finish it all because I started to get really full for some random reason – so unlike me!

LUNCH

I am so proud of my lunch today 🙂 The recipe is nothing special, but it turned out great and was a definite break from what I normally consider breakfast food – a Healthy Egg McMuffin! I know, sounds like an oxymoron right?!

This creation called for an Ezekiel English muffin (my first time trying them – they are so good!!), 1 Boca Vegan burger, and 1 microwaved poached egg white sprinkled with melted reduced fat Mexican cheese and topped with a bit of ketchup! Here is the step-by-step process:

It was an amazing array of flavors – I will definitely be making this again!! On the side I had a “breakfast” food inspired by Em from Gliding Calmsalad!

Fresh spinach topped with mushrooms and Annie’s Goddess dressing YUM!!

DINNER

So along those same lines, dinner for the breakfast challenge was salad and “toast” – I figure if you’re willing to put spinach in an omelette, then salad is breakfast 🙂 My roommate and I went to Cosi for the first time in a while – it didn’t disappoint!!

I got the Bombay Chicken Salad – it came with peppers, cucumbers, mixed greens and onions. On the side, I had some whole grain Cosi bread. I could definitely eat this for breakfast – and so the challenge continues!! :mrgreen:

    Oh my goodness that egg mcmuffin is So. Perfect. I always get those when I go to McDonald’s–but they’re usually so greasy :p I LOVE your healthy version!

  2. I need to try those english muffins! Ezekiel bread is sooo yummy, so I can imagine the muffins are too.

    Your “Egg McMuffins” are about a billion times healthier than that junk from McD’s!

  5. I actually don’t like almond butter that much either, I tried cashew butter recently too and that didn’t do anything for me either. Peanut Butter is just the way to go. It is weird though because I like almonds and cashews way more than peanuts…Maybe I’m just crazy ; )
