I am desperately trying to fix my camera – it works fine but when it’s time to download my pictures, it says all the files are corrupt π I had an entire spread of step-by-step pictures for my Banana Oat Bars. For now, I’ll just show you the final product:
I looked up recipes for banana bread, scones and muffins. I knew I wanted bananas as the key ingredient – what I ended up with was an oaty, doughy, chewy and naturally sweet treat
I added raisins and chocolate chips to a portion of the dough (again, imagine step-by-step pictures inserted here). The rest I left plain. I even had pictures of banana “marshmallows” – darn it!
Here is my recipe:
- 1 cup whole wheat flour
- 1/2 cup dry oats
- 2 tbsp. Promise light
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- Cinnamon to taste
- 2 ripe mashed banana
- 1 tbsp. light brown sugar
- 1/4 cup unsweetened vanilla almond milk
Preheat the oven to 400*. Mix first seven ingredients together in a large bowl. Mix banana and brown sugar together in a separate bowl. Alternate adding banana mixture and almond milk to dry ingredients. Mix until moist. I then spread the dough out on a flat baking pan (covered with Silpat) and added the raisins and chocolate chips to one corner of the dough “rectangle.” I baked it for 10 minutes so the bottom was just slightly brown.
I cut the dough into eight squares that are roughly 100 calories each. By the time I scraped the batter bowl clean and tried a piece I was very full!
Earlier at the gym I did my arm workout, and I also made a Very Berry smoothie once I got home. I had a picture of that too but…you know.
I’m going to say this experiment in the kitchen was a success. The bars have a very unique, indescribable taste – I personally really like them because of the doughy texture and the sweetness of the bananas. The oats add an extra layer of texture and fun π
