I also used an apple pear puree (all I could get). Oh, and subbed the flax- one batch, I used 1 egg, and the second batch used 2 egg whites. Couldn&#039;t tell the difference but will use a whole egg from now on... I feel bad throwing away yolks!]]></description>

I made these muffins a few weeks ago before a trip, for a healthy, filling snack for the plane. 

The only change I made was using spelt flour instead of whole wheat and I added a tbsp of butterscotch chips on top of the chocolate and mixed half of both chips into the batter.

They turned out really, really great. I loved how dense and moist they were and although mine turned out a little flat (probably b/c of the spelt) they were still awesome. Thanks for the recipe, I&#039;ll be making these again for sure.]]></description>
