ICBIT!! [I can't believe it's Thursday!!]

This week has gone by in a flash, as they always tend to do when there is a lot going on. I apologize for the lack of posts but fortunately have had some more wonderful Guest Benders to keep things current :) Additionally, I am thrilled to report that my new business is now officially official. What better way to celebrate than by cooking more often — and sharing it with you, of course!

Recently, a sample sent to me from the people at Tribal Moose called for just such a kitchen occasion.

It’s not every day that you hear about Cranberry BBQ Sauce. Much less get offered the opportunity to sample! I was very intrigued and decided to use it to make my Lazy Chef Chicken recipe, minus the “Smokey Maple” and with the new addition of antioxidants.

Ingredients (serves 2):

Directions:

Preheat the oven to 400* while prepping. Rub each chicken breast with roughly 1/2 tbsp. of sweet mesquite. Dash with ground pepper until seasoned to your liking. Then comes the key ingredient: cranberry BBQ sauce. I coated each chicken breast with 2 tbsp. (one serving) of the sauce.

Bake in the oven for approximately 30 minutes. During that time, you can get in some quality blog reading ;) Or perhaps follow the latest foodie conversations on Twitter.

I served the chicken with vegetables cooked in olive oil over the stove — just a bag of frozen veggies because it was quick and easy. I was very happy with the result!

And how did the chicken taste? PHENOMENAL! I am a big fan of the cranberry addition to the BBQ sauce. It’s something I never would have thought of on my own, but once you try it you see why someone else did :) I highly recommend taking a look — thanks to Tribal Moose for the opportunity!

    Wow that chicken looks sooo good! I love new chicken breast recipes! Thanks for sharing! Now to find that bbq sauce somewhere…hmmm…

    That’s so neat that it’s not just BBQ sauce, it’s Cranberry BBQ sauce! Sounds delish! Love the chicken dish you made with it – quick and easy recipes are the best!

    Weekend should be fun! We’re heading to Nick’s parents tonight to visit them and his pregnant sister/husband! She’s SO cute right now. We’ll be celebrating Nick’s dads birthday and *hopefully hitting up a Maple Syrup Festival if the weather cooperates.

    Ow! Cranberry bbq? That sounds out of this world fabulous. I bet it’d go great with turkey (kind of thanksgiving-ish!). Your dish looks so pretty with the fresh veggies. Congrats on officially having the business up and running! I am so glad its the weekend!! Not a lot planned- we have to do taxes

    I really want to try some of that bbq sauce. I love trying new ones, and I honestly don’t think I have met a bbq sauce I didn’t like. I am excited for your new business web page, I will definately be checking it out! The chicken looks great by the way, definately something I would eat up!

    Glad the business is going well. How exciting!!

    I am a weirdo and hate the taste of BBQ sauce. That sometimes poses a problem since I live in the south!
