PistachiOH NO!

FYI: It looks like pistachios are now being recalled. Will salmonella please stop attacking my favorite nuts?! (That’s what she said.)

I’m a little emotionally drained today :neutral: I’ll stick to the food, capeesh?

I woke up early this morning and did 30 minutes on the elliptical at the gym, followed by a P90X Core Synergistics workout. Fabulous.

Breakfast was totally ‘fubulus thanks to Miss Erin. I had a tofu coupon this weekend and I used it to by extra firm and silken tofu. I used the silken in my oats this morning!

The only thing I would change about this bowl is that next time, I’m going to try the blended technique. I need me some creaminess instead of the little ‘fu pieces. Other than that, it tasted awesome. Here’s what went in:

  • 1/2 cup quick cooking oats
  • 1/2 cup water
  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 sliced banana
  • 1/5 package silken tofu (aka 1 serving)
  • 1 tbsp. Barney Butter (from my contest winnings!)

I put the tofu in near the end of the cooking process. I wanted a hot bowl, so I figured I would let it cook a little, too. I wasn’t really sure what I was doing, but it turned out good and I will definitely blend it next time to make it even better. Thanks for the idea, sistah! I also had some Coffee Cocoa.

After breakfast, I took a nap (ha, waking up early made me sleepy!) for 30 minutes and then got prepared for my first class. I really like my accounting course. The teacher seems very cool – she spent years working for Quaker and at one point was pretty high up at GHIRARDELLI – and I think the information we learn will be very useful. Once class was over, I came back and was ready for lunch.

The theme of today’s lunch was “fries” a la Sarah, who had a fry challenge a while back. I made a ton of fries out of 1 sweet potato, 1 red pepper and 1/2 cucumber. I covered the SP in ketchup.

And had roughly 3 tbsp. cucumber dill hummus for the other veggies.

This left me so full! It’s amazing what water + fiber can do to the tum (in a good way). I wasn’t hungry for anything else, but I was pretty chilly and somewhat not in a good mood, so I made another mug of Coffee Cocoa to drown my sorrows feel better.

The rest of the afternoon is kind of a blur. I had every intention of being productive, but my mood just wasn’t going to let that happen. I ended up taking another nap for 45 minutes. It was just one of those days. The rain sure didn’t help.

My Tuesday afternoon and evening is full of classes, so I wanted to make sure I was fueled. Before I left, I made myself a protein shake using this packet from YouBar that I received a few months back:

I further customized the YouShake by adding 1 cup of unsweetened vanilla almond milk and 5 ice cubes. I blended it all up in the Vita-Mix and came out with this:

It was really tasty. Thanks, YouBar! I’m looking forward to the other mix I still have waiting for me.

To get me through the classes, I also packed a sandwich + string cheese.

The sammie was made with 2 slices of whole wheat bread and 3 tbsp. PB2. It was v. delicious.

I loved my marketing and my photojournalism classes! I am so pumped about this new fancy schmancy camera! First I have to learn how to work it ;) But then I am going to experiment!

Ok, I gave in after class and had another one.

    Your eats look fab! I don’t think I could deal with ‘fu in my oats in the a.m. but it is oddly intriguing.
    I had Jay Robb in my oat bran this a.m. and I think I liked it! I’m going to try a breakfast cookie with my remaining vanilla whey, then do something else with the chocolate egg white protein packet. I’ll probably end up with chocolate whey though :)

    I really like the idea of adding soft tofu to oats. I bet it would be really creamy if you blended it.

    Yeah, I can see how little bits of tofu in the oats wouldn’t be the best eats. You could probably just blend the tofu, then stir it into the oats if you didn’t want blended oats as well :)

    I was bummed about the pistachio thing too–my mom sent me an urgent e-mail making sure I knew about the recall since she knows how much I love those guys!

    I had a “fry” kinda day today too! I had hummus and dippers for lunch as well, and your cucumber dill hummus looks fabulous! Did you make it yourself? I also had some zucchini fries:)

    I’d love to try that YouShake–I am desperately low on my protein powder supply!

    I loved your lunch! In Israel (my home country) the produce is so cheap I eat veggies (baked/steamed/raw) ALL DAY LONG! I could live on them! Well, and on porridge!

    I’ve had my bag of pistachios in my cupboard for so long, there’s no way they are the dirty nuts. I just wanted to say dirty nuts, since you already used my line. :)

    I love everything about this post… especially the mention of your photojournalism class – can’t wait to see how that goes! But about your oatmeal bowl… you need an upgrade! There’s so many Christmas-y oatmeal bowls still floatin’around the blogosphere… it’s SPRING! :)

    I love your blog. I’ve commented before, but I don’t have a blog. I’ve been wanting to try blending my oats too, because I’ve seen the idea around the blogs. but I can’t seem to find where the blog post that tells you how to do it is.

    I saw the post once, but I forgot to bookmark it, and now all I remember is that it had a picture of a hand blender on it and it made you scroll down a lot before it told you the instructions. Do you maybe know what post i’m talking about?

    If you do, could you possibly link to it in your next post? Because I might forget to check back here, but I always always read your new posts so I’ll be sure to see it that way :) . and I’m betting your other readers would enjoy the link too, since everyone who’s tried blnded oatmeal seems to like it so much.

    If you don’t know what I’m talking about, then I’m sorry to bug you! It’s just that I’ve been looking for this mysterious post for a while now. So I’m crossing my fingers that you know what I’m talking about and don’t just think I’m a crazy blog fan!

    emotionally drained is so much worse than physically drained!! we definitely need a phone date soon! Are you free tonight?

    I’m so glad that you like your accounting class—I’m taking one now too and I LOVE IT! I have an exam in it tomorrow though which I don’t love so much, haha.

    Blend the tofu in the oats next time, it creates much more volume and creamy texture…I love it =)

    It was SO funny…i havent had pistachios in forever..and once i see them on the news, and all the recall info- I’m like dang i really want some now!!     I almost bought a bag of Pistachios on Sunday, so glad I didn’t now! Sorry to hear your day is going badly, I hope this one goes better.
